Neko (猫) – DISH// (北村匠海)

A few weeks ago I saw a movie called ‘Our 30-minute Sessions‘, it was part of my journey of watching all of Mackenyu’s movies and TV shows. I didn’t expect to discover a movie that has since become one of my all-time faves. I adore that movie! In addition to Macken, there is another lead actor in it named Takumi Kitamura. He is also super talented and he has a great voice too. He is in a band called DISH. And thanks to algorithm gods, the following song popped up on my for-you page on Youtube. It was love at first listen. I love the song, I love the lyrics, I love his voice in it. So I’m here to share, hope you enjoy and have a great weekend!

Miso Soup – Recipe

One of the first cuisines I got into is Japanese. I think Japanese home cooking is very diverse, healthy and easy to learn if you are a beginner at cooking. I followed this Youtube Japanese cook named ochikeron and her miso soup recipe is still one of my favorite. I’ve later combined Jamie Oliver’s miso soup recipe (that I can’t find from anywhere online) with this one and made it my own. Just like last Monday with the kimchi stew recipe, I would share the base recipe and then, in the end, I would share my tips to make it versatile.

Ingredients (serves two):

4 strips of bacon, chopped or 100 g bacon cubes
3 gloves of garlic, minced
2 fresh jalopeño peppers (or other green chilis), chopped
1 tbsp ginger paste
1 tsp of dashi powder
3 tbsp of miso paste (I prefer white, but both yellow and red miso are great too)
4 cups / 1 liter of water
1 medium sized onion, sliced
200 g potato, chopped into bite-sized cubes (the kind suitable for soups) (Optional)

Instructions:

1. Heat up a soup pan, preferably non-stick.
2. Add in bacon bits or cubes and fry them until the oil comes out.
3. Then add the chopped jalopeños and garlic and fry until fragrant.
4. Mix in the ginger paste and miso paste, careful not to burn them.
5. Pour in water, mix well until miso paste is fully combined with the water and bring to a boil.
6. Mixed in potatoe cubes and sliced onion. Cook until potatoes are soft and you’re done. 🙂

Garnish:

  • Fresh chopped green onions

What to eat with it:

  • white rice
  • sushi
  • noodles
  • udons

Here is the base recipe. I usually make a big batch of it cos I want to fit more veggies and even some protein into the mix and make it into a proper meal. The veggies that go well with the soup are:

  • mushrooms, any kind
  • zucchini
  • tomatoes
  • corn
  • bean sprouts
  • seaweed

As to protein, these are great:

  • tofu (soft or firm Japanese tofu)
  • chicken (thighs or breasts)
  • pork (shoulders or belly)
  • shrimp

Both shrimp and tofu should be added when the potatoes are almost done, cos they don’t require much time to cook. But pork and chicken should be cooked first in the pan, you can even use some miso and soy sauce to marinate them. And add them back in when the potatoes are almost cooked. If you wish to make the vegetarian version of it, you can leave out the bacon and replace the dashi powder with vegetable stock. Misos are naturally vegan.
